In your Gmail account, find the person in the Chat menu on the left and point your mouse to it (don't click it though) ...

... in the options window that pops up, click More button and choose Recent conversations ...

And here it is are, conversation history between you and the person you were chatting with all chronologically sorted.
Just click one and you should be able to see all the details of that particular conversation.
