1.
Prepare the asparagus and get rid of the hard bottom part.
2.
Cut it into smaller pieces.
3.
We're gonna boil the water up for our pasta.
Take a pot, pour some water in it, put on a hotplate with the highest temperature level set.
Add a few pinches of salt into the pot.
4.
Add three spoons of olive oil.
5.
We're gonna prepare all things needed until the water doesn't start to boil.
Cut the onion in half and cut off the top and bottom part.
Peel it and cut it into small pieces.
6.
Put the frying pan onto the hotplate with the highest temperature level set.
Add 4 spoons of olive oil.
7.
When the oil gets really hot put the hacked onion into the pan and stir it around a bit using a cooking ladle.
8.
Add a few pinches of the sweet ground pepper.
9.
Grate some of the nutmeg.
10.
Stir it and add the asparagus.
11.
Stir it well a couple of times.
12.
Put the tagliatelle into the boiling water and let them cook for a while.
If you don't have or don't like tagliatelle you can use any other pasta you like. Cooking time of the pasta you're using should be written on the box. It's usually somewhere between 3 and 8 minutes.
13.
Add the tomato puree to asparagus and co. and stir it well.
14.
A few pinches of salt.
15.
And a small glass of water.
16.
Peel the two cloves of garlic and chop it into small pieces.
17.
Check on the pasta if it's already cooked and if indeed it is, put it aside.
Don't over cook the pasta, it should still be firm, but not hard or a so called "al dente" way.
18.
Put a few pinches of rosemary into the frying pan.
19.
And the chopped garlic.
20.
Stir it well, turn off the hotplate and put the pan aside.
21.
Use the strainer to drain the water and then put the pasta back into the pot.
22.
Put the asparagus sauce you prepared into the pasta pot sir everything together.
23.
Enjoy the asparagus pasta and let me know if you liked it.

Cooking can be such a rewarding activity! Tagliatelle with asparagus makes for a delicious dish. https://whatslupus.com/lupus/how-to-diff.... The tender texture of asparagus complements the pasta beautifully, especially when paired with a light sauce or olive oil, garlic, and maybe a hint of lemon zest. |
