Homemade vegetable leek soup recipe

A delicious leek soup, rich in taste and texture, healthy as it can be. Great for cold winter days, you can serve it as a starter or a light main dish. Try it, you won't be sorry.

Tomato
Tomato ( 1 piece )
Leek
Leek ( 1 piece )
Carrot
Carrot ( 1 piece )
Potatoes
Potatoes ( 2 piece )
Sour cream
Sour cream ( 2 spoon )
Oil
Oil ( 1 spoon )
Salt
Salt ( 1 teaspoon )

Wash the leek and cut it into slices (see picture).

When you come to the green leafs of the leek, you can separate them and wash them again.

Cut the green stuff as well but only until it looks good.

You can throw the rest away or into a compost.

Pour a bit of oil into a pot.

You can use a regular vegetable or olive oil.

Set a high temperature to heat the oil.

Don't over heat the oil though. The oil should not start smoking as it becomes unhealthy.

Add the leek and reduce the heat.

Stir it so it won't stick to the bottom of the pot.

You can also add a bit of water if the leek starts sticking or burning.

Cut the carrot into slices.

Clean it if it needs the cleaning.

Add the carrot slices into the pot.

Don't forget to stir.

Peel the potatoes.

Wash it and cut it into smaller pieces.

Add it into the pot.

Wash the tomato, cut it into smaller pieces and throw it into the pot.

Keep stirring cook it for a couple of more minutes.

Add warm water (about 3 glasses).

Stir it and let it cook for about half an hour or until the potato gets soft at a middle heat.

Add  a few pinches of salt.

When the potato's done (check it with fork), use a potato mashing thingy and mash the veggies into smaller pieces.

If you like bigger veggie pieces you don't need to mash it at all.

At the end add some sour cream.

If you don't like sour cream, you can skip this step as well.

Stir the soup one more time. Try it if need a bit more salt and add pepper as well if you like it a bit more spicy.

Done deal, enjoy your very leek soup
