The Asparagus Risotto recipe

If you like asparagus and rice, then you will love your very own home made asparagus risotto. Give it a try, it's so simple and delicious.

Short rice
Short rice ( 1 cup )
Garlic
Garlic ( 3 piece )
Asparagus
Asparagus ( 600 g )
Sour cream
Sour cream ( 2 spoon )
Pepper
Pepper ( 1 pinch )
Salt
Salt ( 1 pinch )
Olive oil
Olive oil ( 1 spoon )
Soup cube
Soup cube ( 1 piece )
 
  Persons : 4 | Preparing: 25 min | Making: 4 min | Cleaning: 3 min

Take asparagus.

Remove woody parts.

Repeate the procedure with all asparagus.

Wash them and cut them to 2 cm long pieces.

Cut all asparagus, also flower at the end of asparagus, which is the healthiest part.

Take onion and cut it to half.

Cut it to slices

Cut slices to little pieces.

Heat olive oil.

Add onion and roast it for about 2-3 minutes.                    

Add also some salt and mix all together.

Add asparagus and roast all together for a few minutes.

Add 2 pinches of pepper.

Measure 2dl of rice...

...and add it in a dish with asparagus.

Mix all together and roast the mixture for a few minutes

Add 6 dl of water.
 
You can replace half a glass of water with white wine.
 
When cooking rice, the ratio between rice and water is 1:3.

Add half of soup cube.

I have used vegetable soup cube, but you can also use chicken soup cube.

Cook at medium heat that the water evaporates.

Meanwhile take 3 pieces of garlic

Peal it and chop it.

Rice cooking time is written on the packaging, but you can try it if it is soft enough.

If it's not soft enough add some more water and cook it for a few more minutes.

Turn the stove off and add garlic and cover the dish with pot lid.

After a few minutes add 1 spoon of sour cream and mix all together.

Enjoy your meal!

For better taste you can sprinkle some parmesan over the rice.
